Assistant Head Chef
This role requires the ability to create menu items and then implement systems for stock management and wastage control, and then to implement and teach these systems to kitchen staff. This position requires excellent communication skills, a proactive attitude, and the ability to manage multiple responsibilities in a dynamic environment, managing administrative tasks, and ensuring the smooth operation of the kitchen while maintaining a professional and tidy environment that reflects the Company`s image.

Key Responsibilities:
· Develop and plan new menu items and specials, ensuring alignment with Company brand and standards.
· Provide guidance and training to kitchen staff on daily kitchen operations, ensuring compliance with health and safety regulations, ensuring that all kitchen staff always provides a courteous and professional service
· Assist create and implement systems to effectively manage stock and control wastage, by minimizing spoilage, maintaining adequate inventory of food, utilising food surpluses, portion control and updating recipe files and photos.
· Ability to supervise the quality and consistency, ensuring promptness, freshness and quality of dishes.
· Ability to have a hands-on approach to assist with cooking and preparing dishes to the set required standard, directly supervises the cooking of items that require skilful preparation.
· Ensures all dishes are correctly costed.
· Assist in implementing and monitoring food safety protocols to align with local regulations.
· Ensure staff are trained consistently in preparation and serving of food offering, portion control and assist in teaching recipes to all kitchen staff.
· Assist with staff schedules and coordinates the work of chefs, cooks and other kitchen employees to ensure that the food preparation is economical and technically correct and within budgeted labour cost goals.
· Supervises organization and sanitation of kitchen, walk-in fridges, freezers and the storage areas.
Minimum Requirements
· 5-7 years experience in a busy upmarket establishment
· In-depth knowledge of food preparation and presentation techniques, proven experience of working in an open kitchen will be an advantage
· In-depth knowledge of food costing and portion control
· Excellent culinary skills with a particular flair for high quality dishes
· Excellent customer focus
· Impeccable health and hygiene standards
· Excellent supplier relationships
· A natural leader with the ability to motivate/ develop and discipline the team
· Excellent organisational and time management skills
· Proficiency in computer skills, including inventory management, software and Microsoft Office Suite
· Ability to monitor stock on hand
· Strong teaching skills to effectively train and mentor staff
· Ability to create and implement systems for effective wastage management and stock control.
