Cracker Zac's is seeking a strong, disciplined Kitchen Manager to take full ownership of kitchen operations in a fast-paced entertainment and hospitality environment.
This is a leadership role for someone who understands that kitchen management is about operational control, cost discipline, and consistency — not just cooking. We are looking for a commercially aware professional who can manage food cost, control stock, lead a team under pressure, and maintain high standards during peak trading periods.
Job Purpose
The Kitchen Manager is responsible for the day-to-day running of the kitchen at Cracker Zac's — a high-volume, late-night entertainment venue. The role covers staff management, stock and cost control, food safety compliance, and supplier coordination, ensuring the kitchen delivers consistent, high-quality food efficiently during extended trading hours, including nights and weekends. This is primarily a management and operations role rather than a creative chef position.
Key Responsibilities
● Manage day-to-day kitchen operations, ensuring smooth, efficient service during peak, high-volume trading periods (evenings, weekends, late nights).
● Recruit, roster, supervise, and manage kitchen staff, including performance management and disciplinary processes where required.
● Control food costs through effective stock management, portion control, waste reduction, and supplier negotiation.
● Oversee procurement and manage supplier relationships to ensure consistent quality and timely delivery of ingredients and kitchen supplies.
● Ensure full compliance with food safety, hygiene, and health regulations (HACCP) across all kitchen operations.
● Maintain kitchen equipment, coordinate maintenance, and manage repairs to minimise downtime.
● Coordinate closely with front-of-house and bar management to ensure smooth service and a consistent guest experience.
● Monitor and report on kitchen budgets, food cost percentages, and operational KPIs to senior management.
● Train, coach, and develop kitchen staff to maintain consistent food quality and operational standards.
● Implement and enforce standard operating procedures for food preparation, storage, and handling.
● Manage stock takes, inventory levels, and ordering cycles to prevent shortages or overstocking.
● Ensure the kitchen operates safely and efficiently within a licensed, adults-only entertainment environment.
Requirements
● Relevant qualification in Culinary Arts, Hospitality Management, or Kitchen/Food Service Operations.
● Minimum 3–5 years' experience in a kitchen management and operations role, ideally in a high-volume restaurant, bar, or entertainment venue.
● Proven track record in staff management, cost control, and stock/inventory management.
● Valid food safety/HACCP certification.
● Willingness and ability to work nights, weekends, and public holidays.
● Strong leadership, organisational, and problem-solving skills.
● Experience working in a licensed venue is an advantage.
