THE Pretoria Hotel is seeking a talented, creative, and passionate Pastry Chef to join our Culinary team. The successful candidate will be responsible for preparing a wide variety of high-quality pastries, desserts, breads, and baked goods for our restaurant, conferences, banquets, and special events.
This role is ideal for an innovative culinary professional who takes pride in producing exceptional products while maintaining the highest standards of quality, hygiene, and presentation.
Key Responsibilities
Pastry & Bakery Production
- Prepare and present a variety of pastries, cakes, desserts, breads, viennoiserie, and baked goods to hotel standards. Develop creative dessert menus and seasonal pastry offerings in collaboration with the Executive Chef. Produce pastries and desserts for the hotel's restaurant, breakfast service, conferences, banquets, weddings, and special events. Ensure all products are consistently prepared and presented to the highest quality standards. Decorate cakes and desserts with creativity and attention to detail. Prepare specialty desserts and custom cakes for guest requests and special occasions.
Kitchen Operations
- Plan daily pastry production based on occupancy levels and event requirements. Monitor stock levels and place orders for pastry ingredients and supplies. Minimise food waste through effective stock rotation and portion control. Ensure all equipment is properly maintained and report any maintenance requirements. Maintain a clean, organised, and hygienic pastry kitchen at all times.
Food Safety & Quality
- Ensure full compliance with food safety, hygiene, and sanitation standards. Adhere to HACCP principles and all health and safety regulations. Maintain proper storage, labelling, and handling of ingredients and finished products. Conduct regular quality checks to ensure consistency and freshness.
Teamwork & Leadership
- Work closely with the Executive Chef and wider kitchen brigade to deliver exceptional culinary experiences. Assist with training and mentoring junior chefs, bakers, and kitchen assistants. Support the kitchen team during busy service periods and major events.
Minimum Requirements
- National Certificate or Diploma in Professional Cookery, Patisserie, Baking, or a related culinary qualification. Minimum of 3 years' experience as a Pastry Chef or Senior Pastry Cook in a hotel, restaurant, bakery, or hospitality environment. Strong knowledge of pastry techniques, bread making, cake decorating, chocolate work, and dessert preparation. Excellent understanding of food safety and hygiene standards. Ability to work efficiently under pressure while maintaining exceptional quality. Strong organisational and time-management skills. Flexibility to work early mornings, weekends, public holidays, and special events.
