A 5* upmarket Hotel with over 100 rooms seeks to employ an experienced Executive Sous Chef with the following ESSENTIAL REQUIREMENTS!

Matric

Professional Cookery Diploma with HACCP knowledge

Must have 5 years experience within a 4 or 5 * hotel with banqueting for at least 1000 pax, the proeprty has over 10 banquet venues and can serve up to 1500 pax.

Knowledge of costing, controls are a must, must be able to oversee multi-outlets

Must currently be holding the position of Exec Sous in a 4 or 5 * Hotel environment

The ideal candidate will need to have good staff management skills be able to mange costs and controls

Own car and license will be a distinct advantage

Responsibilities include: Write SOPs for every product and service that leaves the kitchen and then be diligent on the execution of all SOP’s. You need to be the example.

Submit monthly stocktakes on food and operational equipment.

Achieve food cost monthly

Work hand in hand with the Executive Chef to manage all areas of the kitchen

Assist with development of the chefs through a skills assessment and then a structured “on job training” program.
