The same production kitchen also caters for tailor-made off-site requirements such as small private residences, grand luxury destinations, corporate clients as well as private parties, small intimate weddings and functions at remote and spectacular places throughout the Western Cape.
ProStaffSelect are in search of a JUNIOR SOUS Chef with experience in high-pressured top restaurant or niche market wine estate operations, banqueting and fine dining outlets to oversee, coordinate and manage daily production needs for the main catering production kitchen.
REQUIREMENTS:
OWN TRANSPORT with valid driver’s license is ESSENTIAL due to the various catering locations and assistance needed with transporting items on and off the estate.
Minimum 2 or 3 year recognized professional / formal culinary qualification with at least 5 - 6 years' experience
Culinary strengths all-round but mainly focusing on Hot and Cold production.
A VERY STRONG personality is needed to handle the fast pace and demands of this kitchen
An exceptional planner and organiser, able to anticipate needs of the business and direct staff accordingly.
Confident in delegating prep duties to all staff. Well-mannered and respectful in dealing with people.
Effective communication skills and proficient in English AND Afrikaans with an outgoing and friendly personality.
Must be comfortable to innovate new dishes daily according to ingredients available and THINK ON YOUR FEET with little time to waste.
High culinary standards with attention to detail specifically with food hygiene, plating components and innovating garnishing ideas.
