Kendrick Recruitment is now looking for a knowledgeable Sushi Chef with experience to join the kitchen within one of the leading 5* Hotels and Resorts based in Cape Town.
Ideally, we are looking for a young and dedicated chef with a formal qualification that has had previous training or has previously worked with International cuisines, in particular with the in-demand and fashionable cuisine - Sushi.
You must have a drive and passion for the industry and be interested in and able to keep up with the latest trends and innovations within the culinary world. You will be joining the well-oiled and fast-paced kitchen at a 5* restaurant and so you will need to have excellent interpersonal skills and a friendly but professional attitude.
To be in with a chance of getting this position you must have the following requirements:

Grade 12
-
Minimum of a 6-month formal chef’s training

Must have at least 3 years as a Commis chef in a 4/5* establishment

Must have at least 3 years’ sushi experience

Ability to work in a fast-paced, highly pressurised environment
Duties include, but are not limited to:

Food preparation & presentation to 5 star standards, also noting guest preference / dietary requirements

Contributing ideas and assist in the roll-out of potential additional revenue streams/business opportunities

Assist Chef de Cuisine/Sous Chef (e.g. menu writing, trend research, etc.)

Par stock, costing, rotation & stock take
-
Supervision, motivation, training & performance management of staff
-
Ensure Operating equipment (OE) is well maintained
-
Adherence to all health & safety requirements, including utmost cleanliness, recycling, pest control & general waste management
