A busy bistro-style restaurant situated on a beautiful Wine Estate in Somerset West is searching for two disciplined and confident Sous Chefs that can run a busy kitchen to ensure consistent food quality AND who can manage a large kitchen brigade . The venue offers breakfast and lunch Monday's - Sundays for approximately 450 pax a day and is looking at opening for three dinner shifts a week with effect from September 2024.
Our client will only consider candidates with a stable work history, who have held a similar position previously and who have experience with high-end bistro cuisine. The position requires that the candidate has experience in a large busy restaurant environment and can handle numbers.
As Sous Chef you will be required to play a joint leadership role in ensuring that the Restaurant is a ‘destination’ upmarket bistro style’ restaurant in keeping with the brand. You will be required to work closely with the Head Chef in obtaining these objectives.
Key Performance Areas include:
Contribute to the menu planning with a creative and passionate feeling for classical dining
Supervision of the kitchen brigade when the Head Chef is off shift with a requirement to provide growth for the young chefs in the kitchen brigade
Good knowledge of menu costings, ordering and stock control
Kitchen Management when the Head Chef is off shift for breakfast and lunch service for approximately 450 pax a day
A passion for events and functions with a creative flair and a positive attitude
Ability to consistently follow company policy and procedures, including mindfulness of Health & Safety requirements
Minimum Qualifications and Job Requirements:
Classical cuisine training including a minimum of a two year Diploma or equivalent Chef qualification
Have minimum 3 years experience in a busy up market classical dining establishment with high guest turnover
Be fully bilingual and computer literate (Word and Excel) – with excellent communication skills
Have the ability to work well under pressure in a team-oriented environment
Customer service with attention to detail
Strong people management & administration skills and a positive team player
A strong sense and understanding of what constitutes world class service
Understanding and owning the company brand values
For noting: This Restaurant operates seven days a week, the successful candidate, would as such, be required to work weekends on a shift basis.
