PURPOSE OF JOB
We are seeking a reliable and versatile Scullery Worker / Kitchen Assistant to join our culinary team. In this role, you will maintain exceptional cleanliness in the kitchen, assist chefs with basic food preparation, and handle basic hands-on maintenance tasks to keep kitchen equipment and facility fixtures functioning smoothly.
KEY PERFORMANCE AREAS
Sanitation & Deep Cleaning (Scullery)
- Wash, sanitise, and store heavy cookware, pots, pans, trays, and specialized kitchen utensils.
- Washing of dishes, manage manual pot-soaking stations, and monitor chemical dispenser levels.
- Maintain clean, dry, and safe floors by sweeping, mopping, and degreasing food preparation areas.
- Manage waste disposal: empty food scrap bins, scrub waste containers, sort recyclables, and clear grease traps as needed.
- Deep clean kitchen infrastructure, including exhaust hood filters, stainless steel backsplashes, shelving, and walk-in cold rooms.
Food Preparation & Kitchen Support
- Assist chefs with raw ingredient preparation (washing, peeling, slicing, and chopping produce).
- Measure, weigh, and portion ingredients according to chef instructions.
- Transport ingredients, equipment, and prep trays between storage areas and cooking lines.
- Assist in receiving daily deliveries, checking order accuracy, and stocking shelves.
- Break down boxes, clean all spaces, and keep storage areas neatly organised.
Minor Maintenance & Facility Upkeep
- Perform basic preventive maintenance on kitchen fixtures (e.g., clearing slow-draining sinks, replacing faucet washers, tightening loose cabinet handles or shelving brackets).
- Conduct light equipment upkeep, such as replacing light bulbs, swapping door gaskets on cold units, and descaling dishwashing machines.
- Perform minor touch-up repairs, simple hardware adjustments, or assembling new kitchen shelving units.
- Monitor kitchen machinery for unusual noises, leaks, or wear and report major electrical or mechanical issues to management immediately.
Maintenance & Security
- Constant vigilance regarding facility condition; must take note of damages and report it immediately to management.
Equipment & Supply Care
- Proper care, cleaning, and organized storage of all cleaning tools and equipment.
- Timely reporting of low stock levels for cleaning consumables.
Health & Safety Compliance
- Strict adherence to all PPE requirements and site safety protocols.
- Immediate reporting of any safety hazards or equipment malfunctions to management.

QUALIFICATIONS AND EXPERIENCE
Qualifications
Experience
- Required: 1 - 3 year’s previous experience as a kitchen porter, scullery worker.
- Specific Experience: Prior experience in food preparation and working in a kitchen reporting to a chef.
- Shift work: Be available to work Weekends, Night Shifts and Public Holidays.
Pay: R5 000,00 - R5 895,00 per month
