Kendrick Recruitment is currently seeking a Sushi Chef for a new Asian inspired Restaurant based in Geroge. You will work alongside the Head Chef to manage food stock and handle a wide range of ingredients, with attention to detail to fulfill quality standards.
RESPONSIBILTIES:

Creating a rich sushi menu with various main ingredients and raw fish (for example, salmon, tuna, unagi)

Preparing all types of sushi, including maki, nigiri and sashimi

Manage and lead the kitchen staff in chef’s absence

Coordinate with our wait staff to ensure proper cooking, considering special requests and food allergies

Prepare appetizers, soups and salads that are close to the philosophy of Japanese cuisine
-
Provides guidance to junior kitchen staff members, including but not limited, to line cooking, food preparation and dish plating
-
Oversee and organizes kitchen stock and ingredients
-
Ensures a first-in, first-out food rotation system and verifies all food products are properly dated and organized for quality assurance

Keeps cooking stations stocked, especially before and during prime operation hours

Train and assess staff on the job

Manages food and product ordering by keeping detailed records and minimizes waste, plus works with existing systems to improve waste reduction and manage budgetary concerns

Supervises all food preparation and presentation to ensure quality and restaurant standards

Works with head chef to maintain kitchen organization, staff ability and training opportunities

Assists head chef with menu creation

Monitor and maintain hygiene and health and safety principles

Maintain staff and leave rosters

Ensure that each dish leaving the kitchen is checked for quality, quantity, presentation and correct temperature
REQUIREMENTS:

Matric, Culinary Diploma preferred

Preferably +/- 2 years previous experience in a senior chef role

Work experience as a Sushi Chef or at an Asian restaurant

Good knowledge of various sushi types and sushi-rolling techniques

Own transport with valid driver’s license

Ability to work both fast and accurately
