Commis Chef
MINIMUN REQUIREMENTS: Post Matric /Higher Certificate in Culinary or related, Degree in Culinary will be an added advantage. Registration and or certification with relevant body (where applicable). 2 year’s experience cooking in a well-established restaurant or full-service hotel
RESPONSIBILITIES: Under the direction of the Executive Chef, prepare and produce food as directed using modern methods, equipment, fresh food and convenience food commodities, including the production of fast foods and unusual dishes. Ensure that all food cooked and served is of a high quality. Ensure that all food is served at a safe and appropriate temperature using probes where necessary and to record same. Maintain sufficient stock levels of all food. Use of a high level of cooking skills in the production of new food dishes using modern food technology and methods. To undergo training in both formal courses and on-the-job to develop cooking and kitchen organizational skills. To aid stock taking within the total Kitchen Department in conjunction with the Executive Chef. Undertake any other reasonable duties from time to time requested by the Executive Chef.
COMPETENCIES: In depth knowledge of all standard procedures and policies pertaining to food preparation, receiving, storage and sanitation. In depth knowledge of Health and Safety, including food safety. In depth knowledge of manual handling techniques. Excellent knowledge of menu creation. Knowledge of current food health and safety regulations. Good knowledge of control of substances hazardous and chemical safety. Good knowledge of Health and Safety standards. Working knowledge of kitchen equipment
