Job Title: Senior Sous Chef
Location: Florentin Restaurant, Cape Town, 87 Loop Street
JOB OVERVIEW
We are seeking an experienced and passionate Senior Sous Chef to join our dynamic kitchen team at Florentin Restaurant. As the Senior Sous Chef, you will be the second in command in our kitchen, following our Executive Chef’s specifications and guidelines. Your role will be critical in maintaining the quality, creativity, and excellence of our culinary offerings. You will lead the kitchen team, ensure food quality and consistency, and contribute to menu development.
KEY RESPONSIBILITIES
1. LEADERSHIP AND MANAGEMENT:
- Manage kitchen operations, including cooking, prepping, supervising staff, receiving and placing of orders.
- Lead, train, and mentor kitchen staff, ensuring high standards of performance, discipline, and teamwork.
2. CULINARY EXECUTION:
- Ensure consistent food quality and presentation standards are maintained.
- Oversee food preparation, portioning, cooking, and plating in a timely and efficient manner.
- Work with the Executive Chef to develop new dishes and update menu items based on seasonal availability and restaurant concepts.
3. OPERATIONAL EXCELLENCE:
- Manage kitchen inventory, including ordering and stock rotation, to minimize waste and maintain cost controls.
- Ensure compliance with health, safety, and sanitation standards in all kitchen operations.
- Collaborate with the front-of-house team to ensure smooth service and address any operational challenges.
4. QUALITY CONTROL:
- Conduct regular kitchen inspections to maintain high standards of hygiene, cleanliness, and organization.
- Monitor and enforce food safety standards, including proper storage and handling procedures.
5. INNOVATION AND CREATIVITY:
- Assist in the development of new recipes and menu planning, incorporating creativity and seasonal ingredients.
- Participate in tastings and presentations for menu updates and special events.
6: REQUIREMENTS:
- Experience as a Sous Chef in an upscale restaurant environment.
- Culinary degree or equivalent professional experience.
- Extensive knowledge of various cooking techniques, kitchen equipment, and best practices.
- Strong leadership and team management skills with the ability to motivate and inspire others.
- Excellent organizational and multitasking skills, with attention to detail.
- In-depth understanding of food safety and sanitation standards.
- Ability to work flexible hours, including nights, weekends, and holidays.
- Passion for culinary arts and a creative mindset with a focus on innovation and continuous improvement.
- Strong communication skills and the ability to work effectively under pressure.
- Run the pass and communicate orders with the kitchen staff.
